<p>大家新年快樂唷~~! 很抱歉腳印廚房將近停刊了一個月。因為辦公室搬家加上重新移轉blog等這一陣子真的是忙翻了Orz。對許多忠實的讀者而言真的是感到萬分抱歉T_T。<!--more--></p>
<p>這一期腳印廚房也因應時節「冬至」「元宵」，特別推出「冬暖心暖羊肉湯圓」。</p>
<p>就是要讓寶貝狗狗跟主人都有吃到湯圓過節長一歲呀。</p>
<p>好啦~廢話不多說趕緊介紹今天這期腳印廚房吧。開始來今天的菜單介紹吧:「冬暖心暖羊肉湯圓」</p>

<h3>麵糰作法：</h3>
<p> <strong>1</strong>. 將糯米粉分成兩等分150g/250g。先取150g做燙麵的部分:將糯米粉放置桌面堆成小沙丘狀中間挖出一個圓圈，添加少量水於中間再用手慢慢與糯米粉混合，直到麵團成型至光滑不黏手為止。</p>

<p><strong>2</strong>. 接下來剛剛揉好的麵團在剝成3~4份。置入滾水中，大約8分鐘~15分鐘。(依水多寡、鍋子受熱大小不一定)至麵團呈半透明狀牙籤可刺穿中間無白蕊即可撈起。</p>
<p>----------------------------------------------------------------------------------------------</p>
<p> <strong>3</strong>. 將剩餘250g的糯米粉與剛燙好的麵糰混合，要注意唷~一定要充分將燙好的麵團與糯米粉揉開。若麵團還太黏就在多添加粉一樣至光滑面不黏手即可。</p>

<h3>內餡作法: </h3>
<p><strong>4</strong>. 將羊肉與所有食材切至丁或塊狀，在入鍋滾水燙熟。待稍涼後再用調理機處理成肉泥。</p>

<p><strong>5</strong>. 將先前做好的麵糰大概分成寶貝適合的大小，揉成掌心大的圓餅狀。</p>

<p>再將剛剛楚力好的肉醬包在中間，記得中間要厚外圓要薄包起來會好包又漂亮唷。</p>

<p><strong>6</strong>. 備水煮沸至入揉好包好餡料的湯圓。約煮至10-15分鐘即可撈起待涼後就可以給寶貝享用摟^^。</p>

<p>腳印廚房開始前，還是跟大家報告近況。其實許多讀者應該不難發現，只要腳印廚房拖稿沒準時介紹給大家時，一定很多朋友就會猜測「Willie應該又不知道在忙什麼鬼了…Orz」。<br />
不過這樣算是對我仁慈了。相信應該有不少這樣的聲音!!「X的，每次都不準時害我們家寶貝這星期沒菜單」&gt;//&lt;。唉~這一陣子真的要跟各位關心的朋友獻上萬分歉意呢。           <!--more--></p>
<p>腳印廚房也即將滿一週年了，我們也透過這個部落格跟大家這段時間的交流與意見分享。真的很感謝這所有給予建議、支持、批評的朋友們。</p>

<p><strong><span style="color: #ff9900;">Step.1</span></strong></p>
<p>將所有食材的清洗，西芹切成碎丁狀。並準備一鍋滾水穿燙食材。<br />
紅蘿蔔、小玉米先燙熟後再切成碎丁或小塊狀(較方便處理)，水煮蛋也可以在這時準備好。</p>

主人在下廚給寶貝們吃的時候。原料比例以穀40%~30、肉類30%~40%、蔬30%~20%即可。若寶貝有過敏原料請進行調整。選材方面若使用有機吃起來也最好。若無，以當季新鮮即可^^。無需經過刻意繁雜的調理加工最能吃出健康。<a href="http://doggywillie.blogspot.com/2008/11/footprint-kitchen-1.html">第一期</a>。</p></blockquote>
<p><strong><span style="color: #ff9900;">Step.2</span></strong></p>
<p>接下來準備將尖管麵煮熟，一樣置入剛剛燙過蔬菜的滾水中，大約12分鐘~15分鐘。<br />
(依水多寡、鍋子受熱大小不一定)大概時間後將麵切開中間無白蕊即可撈起。<br />
再將鮭魚燙熟後撈起待涼後，再將魚刺挑出備用。</p>
<p><strong><span style="color: #ff9900;">Step.3</span></strong></p>
<p>待所有食材放涼後在混入攪拌盆中，從冰箱取出奶酪充分攪拌。<br />
最後灑上水煮蛋碎丁即大功告成唷!!</p>

<blockquote><p>品名　　　營養及好處<br />
鮭魚　　　含有蛋白質、鈉及維生素A、C，及礦物質中的鐵。<br />
魚類的Omega-3脂肪酸成份可預防腦部老化清除體內多的油脂，<br />
可降低膽固醇保護心臟等。其中維生素A可預防皮膚乾燥及感冒。<br />
魚油更是自然品質中極佳的脂質來源。</p>
<p>奶酪　　　主要是牛奶經過乳酸菌發酵及凝乳所製，也是種濃縮的乳製品。<br />
鈣、蛋白質、脂肪、維生素A、維生素B2含量約牛奶的７~８倍。<br />
選購給狗狗盡量以低鈉、低鹽、低脂為選購要點，且少量攝取。<br />
並注意製造日期及冷藏保鮮。<br />
(一般較難購買，COSTCO可以買到且選擇眾多，或無糖優酪也可)</p>
<p>紅蘿蔔　　維生素A、B1、B2、C、D、E、K、葉酸、鈣。可平穩血壓、<br />
強化肝臟、促進代謝及清理腸胃，是最天然的綜合維他命。</p>
<p>西芹　　　含有豐富膳食纖維、維生素A、C、胡蘿蔔素，<br />
礦物質鉀、鈣、磷、鐵、納。具有降血壓與膽固醇的功用。<br />
其中芹菜葉的營養比芹菜莖更具價值<br />
SO~芹菜葉若無太老可用於煮湯增加風味，千萬別丟棄浪費唷。</p>
<p>玉米　　　含有豐富蛋白質、脂肪，礦物質中的磷、鈣、鐵、鎂、硒<br />
維生素E、B1、B2和脂肪酸。且玉米經烹煮後會釋放出抗氧化成分，<br />
可以抗延緩老化及預防眼睛病變等。也是大多狗狗喜歡的食材。<br />
越新鮮的玉米營養含量越高唷。</p>
<p>雞蛋　　　雞蛋中含有維生素A、B2、B6、D、E和礦物質中的鉀、鈉、鎂、磷，<br />
特別是蛋黃中的鐵質最為豐富。豐富的完全蛋白質對寵物很好吸收。<br />
但攝取上也需適量。一天絕不超過一顆。<br />
若腎功能不好或皮膚方面有疾病的的寵物，<br />
不適合多吃雞蛋。這點要多注意。</p>

PS:若主人想吃，建議將組合好的尖管沙拉放上少許鹽、起司乾酪。!!~超!美味唷。<br />

<p>另外補充另外一種方便儲存的方法，<br />
就是將所有完成或剩下的沙拉一起用食物調理機處理成泥狀。<br />
要吃時在加熱放涼後寶貝及享用主人鮮食料理唷^^。<br />
且冷凍儲藏即可，記得儘快食用完畢唷~</p>

<p>唉唷～本期《腳印廚房》給大家拖了那麼久的時間，真是抱歉阿。由於現在每天都在外面開拓 Doggy Willie 的市場與合作機會，飲食皆三餐在外及作息不正常，就連下廚的機會都變少了。而豆豆及妮妮的鮮食飲食問題也都交給輕寵食來解決（看起來開發輕寵食最大的受益人應該是我…）。好啦！廢話不多說，趕緊來介紹本期的《腳印廚房》吧。<br />

<p>馬鈴薯　　主要成分是水分及澱粉<br />
含膠質、胡蘿蔔素、醣類、乳酸鈣及磷、鐵、鎂、鉀等礦物質<br />
維生素有 C、B1、B2、B5等<br />
富含的鉀可防治心血管疾病，幫助體內多餘的水分排出<br />
保存及選購上需注意馬鈴薯是否有綠芽或是表皮發綠<br />
若有絕對不能食用因含有的神經毒素恐會造成身體不適</p>

<p>最後就是讓寶貝親口嚐嚐主人親手製作點心的時間啦，多的餃子可以煮熟後分裝保存。放在冰箱冷凍三至五天保存。待給寶貝食用時稍微微波或水煮即可，記得要等冷了再給牠們吃。</p>

<p>烤箱先預熱，上下火溫度皆為一百二十度。<br />
將雞胸肉切成條狀，厚度約一公分，長度約九到十二公分。</p>

<p>將切好的雞胸肉放入芝麻、迷迭香、羅勒葉均勻攪拌，揉捏後放置冰箱入味十五至三十分鐘。</p>

雞肉選擇的部位以雞胸肉或去骨雞腿肉較好，原因是油脂少且肌肉組織經低溫烘烤後韌性較佳！若沒有乾燥香料，使用新鮮的迷迭香與羅勒也可以（羅勒葉就是九層塔，只是國外與國內品種些許的差異）。</p>

<p>將冷藏後的雞肉條平鋪於網架及烤盤上。<br />
放入烤箱以一百二十度烘烤四十至五十分鐘，至表面乾澀無水份即可。</p>

<p>這次的腳印菜餚精緻、用心滿分！其實這道菜就是新聞上用鍋子煎的那一道菜。只是烹製方式不同而已。話說回來；若要使用煎的方法來製作，記得盡量使用不飽和脂肪的植物油。且使用不沾鍋及少量油即可。替寶貝料理的同時也需注意牙齒的牙垢，除定期刷牙外也可準備一些豬骨關節部位給寶貝啃食。基本上無論是食用任何飼料都會有牙垢的累積，所以要定期幫寶貝做好牙齒的保健可是不能馬虎的唷。而原定本期介紹的寶貝肉乾，於下期製作和大家分享，所以敬請期待唷！</p>

B群。在中醫觀點羊肉性甘熱很適合在冬天進<br />
食暖身。對於體質較敏感的寵物，羊肉會是<br />
一個不錯的選擇。</p>
<p>馬鈴薯　　主要成分是水分、澱粉。含膠質、胡蘿蔔素、<br />
醣、乳酸鈣。磷、鐵、鎂、鉀等礦物質。維<br />
生素有C、B1、B2、B5等。其中所含的鉀可<br />
防治心血管疾病，幫助體內多餘水分排出。<br />
但保存及選購上需注意馬鈴薯是否有綠芽或<br />
是表皮發綠。若有；絕對不能食用!含有的<br />

<p id="fb">本週的菜單是專為年邁或因生病正進行回復修養中的狗狗所設計的。由於豆豆上星期因心臟病引起癲癇的併發症，豆豆起初將近昏迷兩天，身在南部的我真的是心急如焚。所幸獸醫師的照料和豆爸的陪伴，豆豆現在已比較穩定且恢復了元氣。</p>

<p>所以我特別回來針對豆豆製作了這份菜單。由於剛恢復的狗狗需要大量喝水來補充因生病失去的水份，加上這個階段也可能較沒有食慾。所以建議飼主可以在這個階段特別為寵物烹調。<br />
一般為老狗下廚上肉的比例必須減少，且建議使用魚肉。因為魚肉所含的Omega-3脂肪酸可以強化、保護心臟，並搭配其他蔬菜和榖物讓寶貝有更完整的營養攝取。開始今天的腳印廚房吧！</p>
<p>接下來開始介紹今天需要的材料及作法吧！</p>

為年邁的寶貝下廚時。原料比例以穀40%~30、肉類20%、蔬30%~40%較好。選材方面若使用有機吃起來也最好（含較多礦物質即維生素）。若無以當季新鮮即可^^。無需經過刻意繁雜的調理加工最能吃出健康。人在飲食上也是如此唷^^。<br />
但也要記住哪些食物是不能給寶貝吃的唷!!(相關參考請翻閱腳印廚房第一章)。</p></blockquote>

鮭魚建議使用早上市場新鮮的，若是冷凍也可以。但一般市面上處理好的鮭魚罐頭，比較不建議使用，因為為了保存大部分都添加許多納，所以對貓或狗都比較不適合。真的要使用建議用水煮過淡化後再使用。魚刺方面不難剃除，就請飼主費心了^^。</p></blockquote>

<p>所有蔬菜清洗並準備一鍋滾水，把洗好的蕃茄劃上十字刻痕川燙去皮。再用食物調理機打成蕃茄糊備用。</p>
<p><strong><span style="color: #ff9900;">Step.2</span></strong></p>
<p>鮭魚切成片狀表面塗上乾燥迷迭香、乾燥羅勒葉先存至冰箱冷藏備用。高麗菜、胡蘿蔔、敏豆切成碎丁入水燙熟後取出。</p>
<p><strong><span style="color: #ff9900;">Step.3</span></strong></p>
<p>用不沾鍋抹上薄薄的橄欖油來煎鮭魚，待兩面上色在放入水將鮭魚煮熟後，用食物調理機打成肉泥（打的時候可以放些煮魚的高湯，若無調理機用到剁也可以）。最後再將所有食材攪拌均勻即可食用。<br />
